This plant has interesting, almost spiky looking leaves and a bit of a peppery flavor. It is good in smaller quantities mixed with more mild greens.

Kale
VERY nutritious, but this veggie can be a bit bitter raw. I eat it almost exclusively cooked, but it is a good addition to a salad and diet in general purely for the health value.

Iceberg Lettuce
It's mild flavor makes it popular, but it's not very nutritious. If you're looking for a healthy salad you're better off picking a different green.
